Many vineyards, but also many olive groves surround the Samnite hills, protagonists of knowledge and traditions that merge with the most ancient presences of man in this land that is always generous with those who respect it.

And the long-lived olive trees are the memory of the good soils and of the faithful work which, today as yesterday, serves to draw from their fruits the best extra virgin olive oil for the palate and for health. The ancient trees, the large trunks that characterize the landscape, belong to the three cultivars of all time: the Ortice, with its high foliage and elongated fruits, the Ortolana with its pendulous branches and the aroma of apple, which also earned it the name of Melella, and the Racioppella, which constantly gives its bunches of olives. Continuous care, harvesting still done by hand and cold milling on the same day are the other determining elements for the quality of the Sanniti DOPs, the Sannio Caudino Telesino extra virgin olive oil and the Sannio Colline Beneventaneextra virgin olive oil. Special oil, to be enjoyed in absolute simplicity on a slice of bread, perhaps with saragolla, an ancient durum wheat still grown throughout the Sannio area. With flour, “criscito”, sourdough, for the first leavening and brewer's yeast for the second, we make wood-fired loaves with a characteristic straw-yellow crumb and a crunchy crust, ideal for testing oil and to accompany with discretion the cheeses and cured meats to which the extensive zootechnics of the Samnite lands have preserved authentic and genuine flavors. The choice is very wide and full of embarrassments, given the high level of quality of the various productions. Better to let yourself be guided by what each single territory, town and district has to offer, because the variety of the offer is full of surprises everywhere.
