Hazelnuts with honey are the basic ingredients of the "cupeto", the nougat, which in its territorial variations is among the typical sweets of many Irpinia towns.
One of the main production centers is Dentecane, a hamlet of Pietradefusi, with its nougat factories. By ancient tradition, pilgrims visiting the Sanctuary of Montevergineconsumed nougat and in fact the one from the nearby village of Ospedaletto d'Alpinolois very famous. There is a hard and a soft version, very common in Irpinia with the name of pantorrone, for adding to the usual ingredients of sponge cake soaked in rum and Strega liqueur. A variant is the Spantorrone di Grotta, originally from Grottaminarda in the Ufita valley, a particularly crumbly dessert, which is divided into flakes when cut.
